Mason jars make every day feel like summer, whether you love canning fruit and vegetables from your garden, have jumped on the salad-in-a-jar craze or simply adore using them as glasses for your favorite iced tea. Personally, we prefer Key lime pie in a jar, and we want you to enjoy it, too! Key lime pie is the dreamy, creamy state pie of Florida. For good reason! Not only is it made from the small Key limes that grow in the Florida Keys, this popular American pie is simply divine in balancing sweet and tart, creamy and crunchy. Traditionally, Key lime pie is made with Key lime juice, sweetened condensed milk and egg yolks. Since we wanted a no-bake version, we’ve omitted the eggs and swapped in cream cheese. The cream cheese gives our no-bake Key lime pie the creamy custard-like consistency that Key lime pie lovers crave. Cook’s note: If you can’t find Key limes in the grocery store, you can order them online or substitute bottled Key lime juice. No luck? No problem! We won’t tell anyone if you use regular supermarket limes.
