2 lemons, juiced1/3 cup organic olive oil1 heaping tablespoon Dijon mustardDash of salt, pepper, and garlic powder  

  1. Saute sweet potato in paprika and garlic for 20 minutes, until crisp.
  2. Chop and mix all ingredients together.
  3. Mix dressing ingredients together in a separate bowl.
  4. Top salad with dressing.
